 I love broccoli, I love eggs, and I love cheese.  Bittman's recipe on page 802 allows me to simply combine all these ingredients into an easy-to-make // easy-to-eat omelet!

With the help of some water and ye old cast iron skillet I got my broccoli nice and green, as well as soft (I love me some soft veggies, can't deny it - though you can definitely see when overcooking starts to break down the nutrients as the color begins to disappear :(  ... ).

The result!  Okay maybe not as easy-to-make as I thought, it was hard to keep my omelet together but I bet with enough practice I'll get it down, maybe some more cheese, yummm!  Or maybe just more skill, yeah.
