Spaghetti Night

This week I had several people over to watch the Presidential debate and celebrate a friend's birthday. I decided to make Bittman's Meat Sauce, Bolognese Style (from page 531, hard cover) to feed the group. The dish took a lot of time to prepare, but paid off with its marvellous taste.
The recipe called for three types of meat: bacon, ground pork and ground beef, along with a medley of vegetables, tomatoes, wine and cream. The birthday girl brought tomatoes from her dad's garden (he typically feeds excess tomatoes to the chickens) and I prepared them as we learned in class.
All these tomatoes added a lot of liquid to the stock but after about 3 hours at a low simmer, the sauce reduced enough that I was able to finish it off with cream.
With the addition of fresh salad and bread, we had quite the feast that everyone seemed to enjoy.
This recipe definitely earned 5 out of 5 stars!
