Mushroom Risotto

I LOVE risotto. It's something I have never attempted to make on my own so I was eager to learn how. I was under the impression that it took a long time so, after reading through the recipe, I was surprised to see it would only take about 30 minutes cooking time. Come to realize, it takes a bit longer than 30 minutes, at least for me. After cooking for about 30 minutes, I tasted it and the rice was was still well under cooked. While it took much longer than expected, it turned out well and tasted delicious!
