Roasted Roots

Apparently the trend for Fall 2012 is roasting root vegetables??  I stumbled across some parsnips and turnips and had zero clue of what to do with them...and then along came Bittman.

Peeling was a pain, but also it was probably my cheap peeler from T.j. Maxx..
Red Quinoa, Roasted: Parsnips, Turnips, Acorn Squash, and Yukon's, Topped with fresh Parmesan

*this meal will definitely become a winter staple*
