Banana Bread

I decided to make Banana Bread (pg. 842-843) from Mark Bittman's How to Cook Everything.


The recipe calls for:
  • 1 stick butter, plus butter for the pan
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp salt
  • 1 1/2 tsp baking powder
  • 3/4 cup sugar
  • 2 eggs
  • 3 ripe bananas
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut


I didn't have chopped walnuts or pecans, coconut, or whole wheat flour, so omitted them from the recipe. I replaced the whole wheat flour with all-purpose flour.










 First I heated the oven to 350F. Then I greased the pan with butter. 

I mixed together all the dry ingredients (flour, salt, baking powder, and sugar).


Then I mixed together the butter, eggs, and bananas. 


Then I mixed both mixtures together. When they were combined I mixed in the vanilla extract. 


I then poured the batter into the pan and baked it. 


I omitted the nuts and coconut because I didn't want to go out and buy them. We had chocolate chips, so I was hoping to sprinkle them on the top. When I checked the cabinet we didn't have them... My mom cleaned out the kitchen cabinets. I was somewhat disappointed that I didn't have those ingredients, but it tasted good anyhow.
