Popovers

This week I made Popovers! The recipe can be found in Mark Bittman's How to Cook Everything on page 847.

The recipe called for:

  • 1 tablespoon melted butter
  • 2 eggs
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour

Popovers are super easy to make! First you have to heat the oven to 425F. Then you grease a 12 cup muffin  tin and put it in the oven while you are making the batter.








The melted butter, eggs, sugar, and salt are whisked together in a bowl. Once they are mixed together, the flour is added little by little. The mixture should be smooth. 









Then you fill each cup until they are about half full. It is then baked for 15 minutes. After 15 minutes the oven temperature is reduced to 350F. The popovers continues to bake for another 15 minutes. While the popovers are baking the oven door should not be opened because it could cause the popovers to deflate. 


When I took the popovers our of the tin and turned them over, they looked like small bowls. 


Bittman says popovers go incredibly well with scrambled eggs. He has a recipe on pages 792 to 793. I already know how to make scrambled eggs, so I didn't follow his recipe. 


I filled the popovers with the eggs and scarfed them down. They were so delicious. Definitely something I would make again.
